2 1/2 c. self rising flour

1/2 c. sugar

1 1/3 c. milk

2 eggs, slightly beaten

Vegetable oil

Powdered sugar, sifted

Mix flour, sugar, milk, and eggs in a bowl Beat till smooth. Heat ½ inch of oil to 375 degrees. Pour ¼ cup batter into funnel, and move in a slow circular motion to form spiral. Fry each side for 1 minute. Drain. Dust with powdered sugar. Serve with applesauce or whipped cream.

FUNNEL CAKES FOR A CROWD:

6 eggs 1 qt. milk 7 c. flour 1/2 c. sugar 4 tsp. baking powder 1/2 tsp. baking soda 1 lg. dash of salt 2 tsp. vanilla Combine all ingredients until smooth. Pour batter into a funnel and dribble in oil. Dust with powdered sugar.
